Cottage Cheese Banana Bread Recipe  

Ingredients

You’ll need ripe bananas, cottage cheese, flour, baking soda, baking powder, sugar, eggs, vanilla extract, salt, and optional add-ins like walnuts or chocolate chips.

Preheat and Prep

Preheat the oven to 350°F (175°C) and grease a loaf pan or line it with parchment paper.

Mash and Mix

In a large bowl, mash the bananas. Add cottage cheese, eggs, sugar, and vanilla extract, and mix until well combined.

Dry Ingredients

In a separate bowl, whisk together flour, baking soda, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture.

Combine and Add-Ins

Stir until just combined (do not overmix). Fold in your chosen add-ins, like chopped nuts or chocolate chips.

Bake

Pour the batter into the prepared loaf pan and bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.

Cool and Serve

Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
