– 1 salmon fillet, baked or pan-seared and flaked – 1 cup shredded carrot – 1 cup shredded cabbage – ½ cup cooked rice noodle – 8 rice paper wrapper – Handful fresh mint and cilantro – Sweet chili sauce or soy sauce for dipping

Ingredients
Prepare all fillings: Cook and flake the salmon, soften noodles, and prep veggies.
Dip each rice paper into warm water until pliable (10–15 seconds).
Lay on a flat surface and layer: herbs, noodles, cabbage, carrots, and salmon.
Fold the bottom of the wrapper over the filling, then fold in the sides, and roll tightly.
Heat 1–2 tbsp oil in a skillet over medium heat.
Fry rolls until golden and crispy on each side (about 2 minutes per side).
1. Drain on paper towels and serve with dipping sauce.
