– 2 tbsp olive oil – 1 onion, diced – 2 carrots, chopped – 2 celery stalks, chopped – 3 garlic cloves, minced – 1 can diced tomatoes (14.5 oz) – 4 cups vegetable broth – 2 cups chopped vegetables (potatoes, green beans, zucchini, etc.) – Salt and pepper to taste – 1 tsp dried thyme – 1 bay leaf – 2 cups leafy greens (spinach or kale) – Fresh parsley for garnish (optional)

Ingredients
Heat olive oil in a large pot; sauté onions, carrots, and celery for 5 minutes.
Add garlic, diced tomatoes, and your choice of chopped vegetables (e.g., potatoes, green beans, zucchini).
Pour in vegetable broth and bring to a boil.
Add salt, pepper, and herbs like thyme and bay leaves.
Reduce heat and simmer for 20–25 minutes until vegetables are tender.
Stir in leafy greens (spinach or kale) and cook for another 5 minutes.
Serve hot, optionally topped with fresh parsley.
