Healthy 4-Ingredient Apple Cinnamon Muffins 

Preheat the oven Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease each cup to prevent sticking.

Gather ingredients You’ll need 2 cups of rolled oats, 2 medium apples (grated), 2 eggs, and 1 teaspoon of ground cinnamon. Optional: a pinch of salt or vanilla.

Prepare the apples Wash, core, and grate the apples with the skin on for extra fiber and texture. Set aside any juice released during grating to keep muffins moist.

Mix dry ingredients In a large bowl, combine the rolled oats and cinnamon. Stir together to evenly distribute the spice throughout the oats.

Add wet ingredients Add the grated apples and eggs to the oat mixture. Stir well until the batter is thick and everything is evenly combined.

Spoon into muffin tin Divide the batter evenly into 8–10 muffin cups, filling each about 3/4 full. Press down gently to help shape them.

Bake the muffins Bake for 20–25 minutes or until a toothpick inserted in the center comes out clean. Tops should be firm and slightly golden. –

Cool and enjoy Let muffins cool in the tin for 5 minutes, then transfer to a wire rack. Enjoy warm or store for a grab-and-go healthy snack!
