– 1 cup unsalted butter, softened – 1 ½ cups sugar – 2 large egg – 2 ¾ cups all-purpose flour – 2 tsp cream of tartar – 1 tsp baking soda – ½ tsp salt – 2 tbsp sugar (for rolling) – 2 tsp cinnamon (for rolling)

Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
In a large bowl, cream together the softened butter and sugar until light and fluffy using a mixer.
– Beat in the eggs one at a time, ensuring each is fully mixed before adding the next. –
In a separate bowl, whisk together flour, cream of tartar, baking soda, and salt.
Gradually add the dry ingredients to the butter mixture, mixing until just combined.
Mix the rolling sugar and cinnamon in a small bowl. Roll the dough into 1-inch balls and then roll each ball in the cinnamon sugar mixture to coat.
Place the coated dough balls on the prepared baking sheets about 2 inches apart. Bake for 8-10 minutes until the edges are set but the center is still soft. Cool on the sheets for a few minutes before transferring to a wire rack.
