– 4 boneless chicken breast – 1 tablespoon olive oil – 1 teaspoon chili powder – ½ teaspoon cumin – ¼ teaspoon cayenne pepper – ½ teaspoon garlic powder – Salt and pepper to taste – 1 cup corn kernel – 1 cup black beans, drained – 1 cup shredded pepper jack cheese – ¼ cup chopped cilantro

Ingredients
Season Chicken: Rub chicken with olive oil, chili powder, cumin, cayenne, garlic powder, salt, and pepper.
Cook Chicken: Grill or pan-fry chicken over medium heat until browned and cooked through.
Prepare Topping: In a bowl, mix corn, black beans, and chopped cilantro.
Assemble: Place chicken in a baking dish, spoon corn/bean mixture over the top.
Add Cheese: Sprinkle with pepper jack cheese.
Broil: Broil until the cheese is melted and slightly browned.
